i have also just learnt a new way of cooking meat;
1.) light a pile of mesquite wood (actual wood chunks) on fire.
2.) let wood burn down for 20 minutes.
3.) close lid and vents to smolder fire.
4.) put meat directly on coals.
5.) cook until desired internal temp (just short of preferred temp, it will continue to cook while resting).
6.) eat the best meat you have ever eaten in your whole fucking life.
this works best for fattier steaks like rib eyes and such, the fat gets charred and holds just a hint of the wood smoke.
